Salespeople are added and managed in the Salesman Master, which you can access by selecting File > Customer > Salesman. You can add salesman, configure commissions, generate statements, and recalculate commissions, all from the Salesman Master.
Each customer you add must be assigned to a salesman, and you may assign a salesman a specific customer Ship To. The assigned salesman may be a specific salesperson at your company or a "House" account. You can also update the default salesperson on a per order basis, if required.

Do not delete a salesperson who has orders tied to him/her. Deleting a salesperson with this history may result in inaccurate salesman reporting and errors when viewing information in the Sales Pivot View.
Instead of deleting the salesperson, change the name of the salesman to indicate that they are no longer active, and then use Mass Change to assign any customers to a new salesperson.
